Pumpkin Tart
Tart dough
150 gr butter ( cut in cubes,cold)
80 gr of ice-cold water
5 gr of apple vinegar
233 gr flour
13 gr sugar
4 gr salt
Place the flour, salt, sugar and butter in the food processor and work it until they crumble. Let the food processor work adding the water and vinegar in slowly. The dough is covered in stretch film and is let to rest in the fridge for four hours. The dough that has rested is shaped with a roll and placed inside a tart model. Punch holes inside the shaped dough using a fork. For the dough to not enlarge while cooking, place oiled paper on it and place weights on top. The dough is to cook for fifteen minutes at 200 degrees. After these fifteen minutes, take the weight and the oiled paper and cook more for five minutes at 180 degrees. The dough is set aside to cool down.
Pumpkin Puree
500 gr pumpkin
50 gr brown sugar
50 gr molasses
½ tea spoon muskat
1 tea spoon ginger
1 tea spoon cinnamon
After the pumpkin’s outer layer has been cleaned off, chop and boil it. The boiled pumpkins are placed with brown sugar, molasses, ginger and cinnamon inside the oven for 20 minutes at 180 degrees. The caramelized pumpkins are placed in the food processor until they reach a flawless form. The puree is set aside to cool down.
The pumpkin puree is placed on the cool tart dough and is cooked for 15 minutes at 180 degrees. After it cools down, the pumpkin tart is ready to serve.
Pumpkin & Oatmeal cookies
1 cup of pumpkin puree
1 cup of sugar
½ cup of olive oil
1 egg
2 cups of flour
2 tea spoons of baking soda
1 tea spoon of cinnamon
½ tea spoon of salt
1 tea spoon of carbonate
1 tea spoon of vanilla
2 cups of chocolate
1 cup of oatmeal
Boil the pumpkin and place it in the food processor until it reaches a flawless form. Using a spoon, mix pumpkin puree, sugar, olive oil and egg. Using a separate serving plate, mix flour, baking soda, carbonate, salt and cinnamon. After this mix reaches a homogeneous form, place them together with the pumpkin. Lastly, add the chocolate, vanilla and oatmeal. Shape the cookie dough in an oven plate using an ice-cream spoon. Cook them in the pre-heated oven at 175 degrees for 15 minutes. After they are cooked, set the cookies aside for them to cool down.
Pumpkin Frosting
½ cups of pumpkin puree
200 gr of mascarpone
3 tea spoons of tea
½ tea spoons of cinnamon
½ tea spoons of cinnamon
¼ tea spoons of muskat
Place all the materials together for the frosting. Place the frosting inside a squeezing bag. Serve the cool cookies by squeezing the pumpkin frosting on top.
